**EASY** Tarte Flambée Alsacienne / Elsässer Flammkuchen - [without yeast/ohne Hefe]

Looks a lot, but they shrink in the oven / Sieht viel aus, aber schrumpft beim Garen zusammen

I love to try out new recipes, always on the hunt for a new "classic" - but I am very, very picky, and too curious to cook always the same stuff. But there is a little list from "Fabi`s classics" in my book. I love the idea to have them all online, because I talk a lot about them with friends and other poor people on parties :). And then I can say : "Just take it from my blog!" - or when I am with my family in holidays, I just can go online and pick a recipe out. Aaaah, GENIOUS!

This one is in my TOP 10 list, because it is so so so quickly cooked. I already infected my best friends with it, and she is not a cook at all!! She cooks herself a potatoe and she is fine with that, but she doesn`t like to spend her time in the kitchen.

What else is great here?:
1) the ingredients are so few, that you can always have them in storage: flour, oil, salt, diced bacon (you can keep the in the refrigerator for looong), sour cream and onions. BAM! That`s it!

2) it makes you full but not in an awkward way. You can easily digest it, except your stomach does not tolerate onions. For that case.....:


3) you can change the spread - it must not be onions! It can be a lot what is in your refrigerator. Salmon, cooked potatoe, goat cheese, herbs, nuts...whatever you think is fine together. You don`t have a classical Tarte Flambée Alsacienne anymore, but it`s tasty, too! But: never never never overload the dough with too many ingredients (except onions and mushrooms, because they shrink while cooking)



4) the time in the oven is very short! - it is quickly made, really!

5) some people cannot eat dough with yeast. Some are just afraid of baking with yeast. So: This is for them! It´s wihout yeast.

Ich liebe es, neue Rezepte auszuprobieren, immer auf der Suche nach immer neuen Klassikern, die in mein legendäres "Klassiker-Buch" eingehen. Ich bin allerdings sehr, sehr wählerisch und oft zu neugierig, um dasselbe mehrfach zu kochen. Es gibt aber eine Klassiker-Liste, klar, und der Gedanke, diese Klassiker online zu haben, ist der Hammer! Ich rede so oft mit Leuten über Rezepte, dass es toll ist zu sagen : "Schau bei mir einfach online!" - besonders praktisch auch im Urlaub...alle Rezepte, die nicht in meinem Gepäck sind, sind dann auf meinem Blog. Oh Gott....grandios!!!

Dieses hier gehört in meine TOP 10-Liste, unter anderem weil es so schnell geht und gleichzeitig eine Geschmacksbombe ist. Ich habe sogar schon meine beste Freundin damit infiziert, und sie kann Kochen nicht wirklich ausstehn. Sie macht sich oft nur eine Kartoffel, und das war`s.


Was noch am Rezept toll ist:

1) Die Zutaten sind so wenig, dass man sie immer im Vorrat haben kann: Mehl, Öl, Salz, Speckwürfel (die kann man ewig im Kühlschrank aufbewahren), Crème fraîche/Schmand/Saure Sahne und Zwiebeln. BÄM! Das war´s!

2) Es macht Dich satt, aber nicht voll, und es ist superschnell verdaut - es sei denn, Du verträgst keine Zwiebeln. In dem Fall:

3) Du kannst den Belag ändern, wie Du magst - es müssen keine Zwiebeln sein. Was der Kühlschrank so hergibt.... geräucherter Lachs, Ziegenkäse, Salami, gekochte Kartoffel, Kräuter, Feigen, Nüsse....was immer Du zusammen magst. Ist dann halt kein klassischer Elsässer Flammkuchen mehr, aber es schmeckt trotzdem saugut! Vorsicht: Den Boden nicht mit schwerem Zeug überladen, nie nie nie nie!!! Weniger ist mehr. Nur von Zwiebeln und Pilzen darf man ordentlich draufschütten, weil die beim Garen zusammenschrumpfen.

4) Braucht nicht lang im Ofen. Es geht echt flott, und es riiiiecht so gut!

Okay, wenn Du das jetzt gelesen hast, hast Du damit eventuell schon mehr Zeit als mit dem Zubereiten verbracht ^^ - Los geht´s!!

Tarte Flambée Alsacienne
serves 2

Ingredients

Dough:

>> 250 grams all-purpose flour
>> 125 grams water
>> 1 TBSP oliveoil
>> 1 pinch of salt

Spread:

>> 3 middle sized onions
>> 100 grams bacon - not as thin slices, but one slice about 0,8-1 cm thickness
>> 200 grams crème fraîche or sour cream
>> salt, pepper and a bit of oliveoil
>> optional: dried thyme or rosemary


Method:

>> Mix all ingredients for the dough. Knead it until it feels smooth (not grainy).
(The dough is not as soft as pizza dough, because there is no yeast in it.)
Wrap in foil and put aside for at least 30 minutes, better longer.
PUT NOT IN THE REFRIGERATOR. It makes the dough too hard to roll it out.


>> Preheat the oven to 250°C/480°F
>> Cover two baking trays with baking paper

>> Peel and halve the onions, then slice them very thin, as thin as you get them
>> Loosen up the crème fraîche/sour cream a bit by stirring with a fork
>> Dice the bacon if it`s not yet diced


>> Sprinkle your working surface just a TINY bit with flour (the dough istn`t sticky at all)
>> Roll out the dough as thin as you can, so that it barealy fits on your tray. As thinner as better
>> Put the dough on your prepared baking trays
>> Put the crème fraîche/sour cream on it and spread with the back of a spoon up to the edges
>> Disperse the sliced onions and the diced bacon generously above the whole tarte.
>> Sprinkle with fresh grounded pepper, salt and olive oil, and, if you eant with a bit of dried thyme or rosemary

>> Put into your hot oven. It just takes about 5 to 10 minutes, but every oven is different. Keep an eye on it and look how dark you like it.

Elsässer Flammkuchen
für2

Zutaten

Teig:

>> 250 Gramm Mehl
>> 125 Gramm Wasser
>> 1 EL Olivenöl
>> 1 Prise Salz

Belag:

>> 3 mittelgrosse Zwiebeln
>> 100 Gramm geräucherter Speck - nicht als dünne Scheiben, sondern am Stück
>> 200 Gramm Crème Fraîche/Schmand/Saure Sahne
>> Salz, Pfeffer, Olivenöl
>> optional:getrockneter Thymian oder Rosmarin


Zubereitung

>> Alle Teig-Zutaten zusammenkneten, bis sich der Teig glatt anfühlt
(Nicht wundern: Der Teig ist nicht so elastisch wie Pizzateig, da keine Hefe drin ist)
In Folie schlagen und mindestens 30 Minuten beiseite legen, wenn es geht, länger.
NICHT IN DEN KÜHLSCHRANK LEGEN! Der Teig wird sonst zu hart zum Ausrollen.



>> Ofen auf 250°C/480°F vorheizen
>> Zwei Backbleche mit Backpapier auslegen

>> Zwiebeln schälen und halbieren, dann in hauchdünne Scheiben schneiden
>> Crème Fraîche/Schmand/SaureSahne mit eine Gabel locker aufschlagen
>> Speck klein würfeln

>> Etwas Mehl auf die Arbeitsfläche geben, aber nur ganz wenig, da der Teig nicht klebt
>> Den Teig erst etwas plattdrücken und dann so dünn ausrollen wie möglich. Je dünner, je besser.
>> Teig-Ovale auf die Backbleche geben
>>
Crème Fraîche/Schmand/SaureSahne darauf bis zum Rand verstreichen
>> Zwiebelscheiben und Speck grosszügig drauf verteilen
>> Mit frisch gemahlenenem Pfeffer und Salz bestreuen (und Thymian/Rosmarin, wenn gewünscht) und etwas Olivenöl drüberträufeln

>> In den vorgeheizten Ofen geben. Es braucht nur 5-10 Minuten, je nach Ofen. Den Flammkuchen im Auge behalten, er wird sehr schnell gar....rausholen, wenn er den gewünschten Bräunungsgrad erreicht hat.
